Ingredients

  • 4 medium Russet potatoes (Notes: Peeled and shredded)
  • 1 small Yellow onion (Notes: Minced)
  • 2 large Eggs
  • 2 tablespoons Matzo meal
  • 1 teaspoon Garlic powder
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground black pepper
  • Olive oil spray (Notes: To coat the air fryer basket)
  • Sour cream (Notes: For serving)
  • Applesauce (Notes: For serving)

Instructions

    Grate the potatoes and onion using a box grater or food processor. Transfer the grated potatoes to a muslin cloth and squeeze out as much moisture as possible.

    In a large bowl, combine the grated potatoes, onion, eggs, matzo meal, garlic powder, salt, and pepper. Mix well and let rest for 5 minutes.

    Preheat the air fryer to 375°F (190°C).

    Lightly grease the air fryer basket with cooking spray or line it with parchment paper.

    Scoop about 1/4 cup of the potato mixture into the air fryer basket, flattening it slightly with a spatula.

    Air fry for 8 minutes, flip the latkes, spray with more cooking spray, and continue to cook for an additional 4 minutes until golden brown and crispy.
