Instructions

1Grate the potatoes and onion using a box grater or food processor. Transfer the grated potatoes to a muslin cloth and squeeze out as much moisture as possible.

2In a large bowl, combine the grated potatoes, onion, eggs, matzo meal, garlic powder, salt, and pepper. Mix well and let rest for 5 minutes.

3Preheat the air fryer to 375°F (190°C).

4Lightly grease the air fryer basket with cooking spray or line it with parchment paper.

5Scoop about 1/4 cup of the potato mixture into the air fryer basket, flattening it slightly with a spatula.

6Air fry for 8 minutes, flip the latkes, spray with more cooking spray, and continue to cook for an additional 4 minutes until golden brown and crispy.
