Ingredients

  • 1.5 cups Chickpeas (Notes: or 1 can (15 oz) drained and rinsed)
  • 1 small Onion (Notes: roughly chopped)
  • 2 cloves Garlic
  • 0.5 cups Fresh parsley
  • 0.5 cups Fresh cilantro
  • 3 tablespoons All-purpose flour or chickpea flour
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (Notes: for brushing)

Instructions

    In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, paprika, baking powder, salt, and pepper. Pulse until the mixture is combined but still slightly chunky. Do not over-process.

    Add flour and pulse again until the mixture holds together when shaped.

    Use your hands or a small scoop to form the mixture into balls or small patties, about 1½ inches in diameter. Place them on a plate or tray.

    Set the air fryer to 375°F (190°C) and preheat for 3 minutes.

    Lightly brush the falafel balls with olive oil and place them in a single layer in the air fryer basket.

    Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.

    Serve warm with tahini sauce, pita bread, and fresh vegetables like cucumbers, tomatoes, and lettuce.

Tips & Variations:

  • For a spicier flavor, add a pinch of cayenne pepper to the mixture.
  • The falafel mixture can be made ahead and refrigerated for up to 2 days before cooking.
  • For a gluten-free option, use chickpea flour or gluten-free all-purpose flour.
