1 medium head Cauliflower (Notes: cut into bite-sized florets)

2 large Eggs (Notes: helps breadcrumbs stick)

1 packet Taco seasoning (Notes: about 30 grams)

1 cup Breadcrumbs (Notes: preferably panko)

8 small Tortillas (Notes: corn or flour)

0.25 small Red cabbage (Notes: finely shredded)

0.25 whole Avocado (Notes: deseeded and thinly sliced)

0.25 cup Dairy-free Greek-style yoghurt (Notes: for spicy sauce)

1 tablespoon Sriracha (Notes: for spicy sauce)

Lime juice (Notes: to taste)

Salt and pepper (Notes: to taste)
Instructions

1Preheat your air fryer to 200°C (400°F).

2In a large bowl, whisk together the eggs.

3In another bowl, mix the taco seasoning with the breadcrumbs.

4Add the cauliflower florets to the beaten eggs and toss well to ensure all pieces are coated.

5Dip each piece of cauliflower into the breadcrumb mixture until well-coated.

6Arrange the breaded cauliflower florets in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through.

7While the cauliflower is cooking, prepare the spicy yoghurt sauce by mixing the dairy-free yoghurt, sriracha, lime juice, salt, and pepper.

8Warm the tortillas in a dry frying pan or microwave.

9Assemble the tacos by adding red cabbage, avocado, and roasted cauliflower to each tortilla. Drizzle with the spicy yoghurt sauce and serve immediately with lime wedges.
