Ingredients

  • 24 oz Chicken Breast (Notes: trimmed and cut into four 6oz portions)
  • 2 cups Flour (Notes: for coating)
  • 2 cups Cornflakes (Notes: crushed for coating)
  • 3 large Eggs (Notes: beaten)
  • Seasoned Salt (Notes: to taste)
  • Pepper (Notes: to taste)
  • 4 null Buns (Notes: for serving)
  • 1 cup Mayonnaise (Notes: for dressing)
  • 1 cup Ketchup (Notes: for dressing)
  • 1 tbsp Yellow Mustard (Notes: for dressing)
  • 1 tbsp Sweet Pickle Relish (Notes: for dressing)
  • 1 tbsp BBQ Sauce (Notes: for dressing)
  • Pickles (Notes: for serving)
  • Lettuce (Notes: for serving)
  • Tomatoes (Notes: for serving)

Instructions

    Start by preparing the chicken breasts. Flatten them with a meat mallet or rolling pin, then cut each one in half to create four pieces of chicken.

    Season the chicken breasts with season salt and pepper on both sides, pressing the seasoning onto the chicken.

    In three separate bowls, prepare the coating ingredients. In one bowl, add flour. In another bowl, whisk eggs. In the third bowl, crush corn flakes until finely crushed.

    Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally, coat it in the crushed corn flakes.

    Spray both sides of the coated chicken breasts with cooking spray, and place them in the basket of your air fryer. Air fry the chicken at 350 degrees for about 15 minutes, or until the internal temperature of the chicken reaches 165 degrees.

    While the chicken is cooking, prepare the dressing by mixing mayonnaise, ketchup, yellow mustard, sweet pickle relish, and BBQ sauce in a small bowl.

    Toast the buns, and spread some of the dressing onto each side of the bun. Top with the cooked chicken, sliced tomatoes, lettuce, pickles, or any other toppings you prefer.
