Ingredients

  • 4 medium Russet potatoes (Notes: washed and scrubbed)
  • 3 tablespoons Ghee or butter (Notes: melted)
  • 3 cloves Garlic cloves (Notes: minced)
  • Salt
  • Black pepper
  • 2 tablespoons Minced fresh chives
  • 4 tablespoons Olive oil (Notes: or as needed)
  • 2 tablespoons Parmesan cheese (Notes: optional)
  • 3 sprigs Fresh rosemary (Notes: optional)
  • 3 sprigs Fresh thyme (Notes: optional)

Instructions

    Preheat the air fryer to 350°F (175°C).

    Slice the potatoes into 1/4-inch sections, careful not to cut all the way through.

    In a small bowl, mix the melted ghee or butter with garlic, salt, pepper, and any herbs.

    Brush half of the mixture onto the potato slices.

    Place the potatoes in the air fryer basket in a single layer.

    Air fry for 20 minutes, then brush with the remaining mixture and continue cooking for another 20 minutes.

    Remove from the air fryer and sprinkle with chives and Parmesan cheese before serving.

Tips & Variations:

  • Use chopsticks on either side of the potato to avoid cutting all the way through.
  • Adjust cooking time based on the size of the potatoes.
