4 medium Russet potatoes (Notes: washed and scrubbed)

3 tablespoons Ghee or butter (Notes: melted)

3 cloves Garlic cloves (Notes: minced)

2 tablespoons Minced fresh chives

4 tablespoons Olive oil (Notes: or as needed)

2 tablespoons Parmesan cheese (Notes: optional)

3 sprigs Fresh rosemary (Notes: optional)

3 sprigs Fresh thyme (Notes: optional)
Instructions

1Preheat the air fryer to 350°F (175°C).

2Slice the potatoes into 1/4-inch sections, careful not to cut all the way through.

3In a small bowl, mix the melted ghee or butter with garlic, salt, pepper, and any herbs.

4Brush half of the mixture onto the potato slices.

5Place the potatoes in the air fryer basket in a single layer.

6Air fry for 20 minutes, then brush with the remaining mixture and continue cooking for another 20 minutes.

7Remove from the air fryer and sprinkle with chives and Parmesan cheese before serving.
