  • Instant-read thermometer

Ingredients

  • 1 pound fresh salmon cut into 4 pieces
  • salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • flour for dredging
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup chicken broth or dry white wine
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes chopped

  • Preheat the air fryer to 390°F for 2-3 minutes and arrange the salmon in a single layer.
  • Brush or mist the salmon with olive oil and air fry for 8-10 minutes, checking for 145°F.
  • While the salmon cooks, melt butter in a small skillet and simmer the broth or wine, lemon juice, and sun-dried tomatoes.
  • Stir in cream and parmesan, then simmer gently until the sauce is smooth and slightly thickened.
  • Add spinach and basil, stir until wilted, and spoon the warm Tuscan sauce over the air fried salmon.

Notes

Storage: Store cooled salmon and sauce in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat salmon in the air fryer at 320°F for 3-5 minutes and warm the sauce separately over gentle heat.
Air Fryer Tips: Keep the salmon in a single layer, use a light oil mist over the flour coating, and check early because fillet thickness can vary.
Extra Crispy Tips: Pat the salmon dry, shake off excess flour, and avoid overcrowding so the coating can set instead of steaming.
Variations: Use chicken broth or dry white wine, swap spinach for baby kale, or add a pinch of red pepper flakes for gentle heat.
